Hi Admire,

you can easily rename the field label using jQuery. Take a look at the
jQuery library on the wiki to learn how this works and to find a lot of
examples: https://wiki.koha-community.org/wiki/JQuery_Library

For renaming the sort1, something like this should work:
$("#pat_memberentrygen label[for='sort1']").html("Grade: ");
