The latest. Always the latest. But on CentOS you're going to have to do
a lot of extra work yourself, whereas on Debian we do that work for you
to make installations easier. So understand that you are taking the hard
path, and perhaps reconsider why you're doing that.

This said, you if you have one or two competent CentOS/Redhat sysadmins,
they totally can make Koha work on it without any drama. It's just
harder than it could be.
