You need to run MarcEdit's MarcBreaker utility on the .dat file and then use MarcEdit's MarcEditor to read it. It should have a nice intuitive layout. Next, from the Tools menu, use the Edit Field Data and Swap Field Data tools to manipulate your fields and subfields. Finally, from the File menu, select 'Compile to MARC' to put it back into a .dat format.
Unfortunately, I don't have my notes on the exact Alice-to-Koha subfield mapping handy (as it's been quite a while) but if you look at Koha's 952 subfield numbers/letters on Koha's 'Add Item' screen and then look at the 995 (I think) subfields of your exported record, you should be able to tell which subfields correspond.

Ok, now I'm confused...
I exported a USMARC file from Alice and then opened it in MARCEdit.
In MARCEdit it turned up as lots of continuous lines like the
following...that wasn't exactly what I expected. What did I do wrong?
Alice exports in 'dat' files, did I need to convert it first? If so,
what do I need to do?
