Yep,  If we can get a hold of good working image.  (vmware has a free utility that will turn a working server into a virtual server which can then run on VMware server or ESX Server) 
Let me know if when you will have time available.

I would like to see this done as well.  I am working on some other projects right now
but when I get a chance I would like to do this.  It really shouldn't be that hard, a
person just needs a working Koha to start with and some instructions on how/what to
change to personalize.
