I'm not sure if any libraries have done this with Koha already, but
Zebra can index XML documents of any schema using its DOM XML filter.
For a technical description of that capability, you can check the
Zebra documentation at
http://www.indexdata.dk/zebra/doc/record-model-domxml.tkl.

Koha would require some additional development to store and edit
metadata in an arbitrary XML format, but some of the basic framework
required is in place or will be added soon.  For example, there is an
experimental feature to use XSL stylesheets to format the display of
MARC XML bib records in the OPAC, and that could be extended to format
other XML metadata types.
