Perhaps your problem is configuration of overdue notices? Make sure you have set no values for the default library in tools > notice triggers. Postfix is listening on localhost, port 25? Ie if you telnet localhost 25 postfix answers. If so Koha should be able to send messages. Try tailing you mail log and running the process_message_queue.pl or another script that sends email and see what happens.
