I found the book 'Koha 3 Library Management System' by Savitra Sirohi & Amit Gupta (Published in 2010 by Packt Publishing) very helpful.

It is a little out of date now, but combined with the Manual (which is up to date), not a bad place to start. Another good resource is the newbie guide at http://wiki.koha-community.org/wiki/Newbie_guide Chris
