For example, I don't see a Koha field for total checkouts in the items table. Is it possible to add this field?
Koha keeps track of checkouts via a separate table, the statistics table. I wrote a little about it here: http://www.myacpl.org/koha/?p=62. That's what Joe means about the data being frozen: Koha wouldn't increment the number for you because it doesn't work that way.
