Randy, Attached is a doc with my notes from when I set up our Koha server with multiple databases. I didn't want to install the core code in multiple locations, just create 3 different databases and access them via different ipaddress:port combinations. One caveat, two of these were for internal use only so I assigned them alternate port numbers instead of using the default ports in Apache. I have since done a little more work with Apache, and if you look on this list or check out the Apache doc and lists for info on setting up virtual hosts you will find there are a variety of ways to do it. I believe you can stick with the default port 80 for the OPAC and 8080 for the staff client if you want, but you'll need to brush up on the various ways to configure Apache.
