      Thank you Jared & Julien.
Obviously without "base biblios" and "format xml" it could not work...
I should have read the f... manual !
So now I am ready to do some work on zebra (beginning with 
http://bugs.koha-community.org/bugzilla3/show_bug.cgi?id=8962 ) ;-)

Here is what I see when I run yaz-client :

Don't forget to choose the database before running a query: base biblios
