At last week's koha-USA online conference, I did a presentation called "Koha for Nothing and your MARC for Free," where I set up a library using Koha, MarcEdit, and Z39.50. Three libraries, actually, though only one in detail. Part of the presentation was a video of me creating an actual instance of Koha on Ubuntu using those directions. Since I didn't have a lot of time and I didn't want my audience to fall asleep, I speeded up the installation by around 4x, so it's not really useful as a detailed training tool. However, you might find it interesting as reassurance that it can be done, and it's fairly straightforward--almost easy.
