[Koha] Daily outage during backups

You should check CPU and I/O. It is taking too long and I guess resources
are not enough to run all the things.
If you manually run:
$ koha-dump <instance>
What takes most of the time? DB? Files?
Do you have a huge /var/lib/koha/<instance> dir? Are you running your
backups with --exclude-indexes?
Those are the questions I would start with.
