From your Staff page, goto Koha Administration ==> Z39.50 client targets 
==> New Z39.50 Server, and fill in the details.

[From your request:
Accesso Z39.50 all'opac SBN.

It does respond, (just tried Il buio e il miele / Arpino) but we're not set

Do you use the first or the second methods described in this document ?
Probably with the first method you  receive a Koha with MARC21 setup.

To check your setup go to:
Koha administration ==> Global system preferences and seek 'marcflavour'.

If the result is 'Unimarc', no problem to use z39.50 params written by 
Paul A.
If the 'MARC21' you can derivate only from Library of Congress and 
others MARC21 source.
The more relavalt MARC21 italian sites are:

go to http://your_koha:8080/cgi-bin/koha/admin/z3950servers.pl, press button "New Z39.50 server" and fill in every required field using info you found in the sbn.it page.
This will allow you to copy cataloging (Unimarc) records also from SBN.

Maybe trivial, but why not make the Koha logo image "clickable" with an 
<a>...</a> tag?
