[Koha] A few questions from the "Librarian"

1.  Is there a way to change the default ItemType?  Or a way to make it where you have to pick the ItemType while doing "simple" cataloging?
2.  If my IT staff wanted to get rid of the dummy data, what would they need to whack (or change)?
