Hi Todd,
To get the bibliographic, item and user/borrower data you will be far better off using the SirsiDynix (is it Unicorn/Symphony?) tools to get the data out.  If you have command-line access to your old system this will include using selcatalog, catalogdump and seluser with dumpflatuser.  Then they will need a bit of manipulation to get into the format expected by Koha for importing bibliographic, item and borrower data.
 
If you plan to take lots of datasets across then extracting from Oracle and into Mysql sounds like a good bet.
 
I won't go into the detail of those commands here but do come back if you have any specific questions.
