Hi Tim,

I think the easiest way might be to specify the due date at the end of
the day to be at a specific time the next day. This way no fines would
be generated as the item won't get overdue (unless the patron is still
late).

If you can't see the option to specify the due date during checkout,
check that the system preference SpecifyDueDate is set to 'allow' in
your installation.
