Where are they showing up as new? Is this the item type, or collection
code, or something else?

If item type:
* Administration -> Item types and edit them to remove the word 'new'
If collection codes:
* Administration -> Authorised Values -> Show category: CCODE, edit them
to remove the word 'new'.

The second part there will hopefully answer your second question, too.
