Koha keeps track of checkouts via a separate table, the statistics
table. I wrote a little about it here:
http://www.myacpl.org/koha/?p=62. That's what Joe means about the data
being frozen: Koha wouldn't increment the number for you because it
doesn't work that way.

I'm not sure what strategies migrating libraries have used to keep
consistent statistics across installations.
