So, we need to create a subdomain for folks to search our catalog from outside the firewall. Does anyone have a sample virtualhost file they are willing to let us use as a sample to copy?

Why not just add it as a ServerAlias to your current virtualhost section? You also need to make sure you have NameVirtualHost *:80 or whatever matches your Koha VirtualHost tag.
