We have a relatively small installation that we are developing, and our biggest problem on the production machines is having only 1GB of RAM. While it is possible to do some performance enhancements for Apache and MySQL, your biggest performance boost would come from additional RAM on your server. I would probably look at about 4GB of RAM as a minimum.
