We host all our (40) instances in a server with that specs. And have at least 10 instances 3 to 5 times bigger than yours. So, I think that's a really good setup. The last item is singularly ill-advised. A single 2 TB hard drive is a single point of failure. A suitable RAID based config is the way to go, if opting for a server class system. It is worthwhile to note that the *usable* space on a RAID system will depend on its configuration.
