I had already run rebuild_zebra.pl
with the -v and didn't see anything but did it again, just to be
sure. No errors. The /var/log/koha also wasn't helpful and the
koha-zebradaemon.err and koha-zebradaemon-output.log were empty.

Finally it occurred to me that I had turned off
QueryAutoTruncate

in the preferences because our staff and our researchers had
requested that. (They hate getting irrelevant results) But turning
it back on fixed the problem of needing the asterisk for every
search term - but of course it means that I will probably get a lot
of complaints.
I would suggest going through the issues discussed in the
Search FAQ first:

http://koha-community.org/documentation/faq/searching/

If none of that works, come back here and let us know what
sort of errors you are seeing in the logs and during
reindexing.
Opps... just noticed that you have reindexed. So run rebuild_zebra.pl
adding the -v switch and look for errors. Also check permissions
on all zebra related dirs and files. They must be owned by your
kohauser.

Kind Regards,
