We have two sites running Koha in a virtual machine. We find it very
reliable, we have VMware running at a number of sites, although only
two with Koha. The VMware server package is very stable and we have not
had (serious) issues with it. <br>
<br>
For backup purposes, each night we take a copy of the entire virtual
machine image. Each night, we also extract a database dump from mysql,
and backup the Koha files 'external' to the virtual machine image. We
do this in case any issues arise with the VM image and we are unable to
mount the virtual disks. Disk space is cheap and it lets us sleep at
night.<br>

We are currently using 'rsync' in scripts to perform both these backup
functions. <br>

I have very little experience with VM related technology therefore
these answers represent my best guess.
1. I would assume so.
2. I think you can simply backup the VM image.
