[Koha] MySQL and utf8

Hi all 

I try to set up my server (debian 4.0) for koha and I follow the guidelines 
in: 

http://wiki.koha.org/doku.php?id=encodingscratchpad 

to make shure the encondings are right. 

Now I have a problem setting up MySQL: 

I added the three lines suggested: 

init-connect = 'SET NAMES utf8'
character-set-server=utf8
collation-server=utf8_general_ci 

in my.cnf in the section [mysqld] 

Some of the variables suggested remain still latin1 

mysql> show variables like "char%";

Is that a problem? What do I have to change to make the system utf8-proof?
